I spent 10 years of my adult life in Missouri and surrounded by delicious BBQ! Pulled pork was my all time favorite! One of our local restaurants specialized in the amazing, BBQ Chicken Pizza and since going low cab I have been craving it like crazy.
If you have been low carb for any amount of time you probably found out quickly that lots of condiments are full of sugar! BBQ sauce is definitely the ultimate offender, coming in at around 17 carbs for 2 tablespoons!!! There are very few low carb, sugar free sauces on the market and truthfully I have yet to see one in my grocery store. The solution: Make your own of course.
I’ve made a few different BBQ sauces in my time but my favorite remains this one and its due to the “secret” ingredient! Diet Dr. Pepper! When you add this to your sauce and let it reduce, it thickens and sweetens and gives it an almost molasses flavor and at zero carbs and sugar, and no calories (if you care about those nasty boogers).
This sauce is amazing on my, BBQ Chicken Pizza, as well as pulled pork, ribs, chicken, I’ve even been known to dip my pork rinds in it! Enjoy!
Makes 1 cup of sauce. Serving size 1 tablespoon, 1 carb per serving
1 tbs olive oil
1 clove garlic, smashed and diced
1/4 cup finely diced onion
6 oz tomato sauce
1 cup Diet Dr Pepper
1 tbs apple cider vinegar
1/2 tsp liquid smoke
1 tsp smoked paprika
1/8 – 1/4 tsp cayeene pepper
1/16 tsp ground clove
- In a small saucepan, over low heat, add olive oil, onions and garlic and a dash of salt. Cook onions until soft and translucent.
- Deglaze pan with Dr. Pepper. Caution, it will bubble up like crazy!
- Next add tomato sauce and remaining ingredients.
- Cook on a low simmer for about 20-30 mins, stirring occasionally. Cook until sauce is reduced by half and thickened.
