I’m willing to be that the last thing you think about when you think, “low carb”, is waffles. Yes, yes, me too… That is until I endeavored on a 3 day egg fast. For three days, my low carb friends and I made a pact to eat eggs and fats only. Yep, that’s it. Eggs, mayo, cream cheese, butter, avocado, hard cheeses, broths and coconut oil.
Desperate times call for desperate measures! Hence forth, the egg fast waffle. A simple concoction of equal parts cream cheese and eggs… that’s it. There are a bunch of bloggers out there writing up posts on these waffles, or “cream cheese pancakes”, recipe is the same. So I cant give credit to one person. But I WILL take credit for the, waffle mania that has taken over our low carb Facebook group!
I will also take credit for my improved version. Adding a smidge of almond flour and a bit of baking powder has truly transformed the texture and appearance of these waffles.
What makes waffles so special? Well, if a plate of glistening waffles covered in sugar free maple syrup doesn’t get your attention, perhaps the thought of using these waffles as “bread” will! I’m assuming you perked up a the mention of the word BREAD….
Two waffles and you have yourself a sandwich! These waffles are the perfect vehicle for holding gobs of mayo and mustard, deli meat and veggies of choice! Once more, those little pockets are perfect for tons of ooey goey cheese!
Layered with ham and swiss and covered in decadent hollandaise?
Truly the possibilities are endless!
Makes approx. 6 waffles. Serving size is 2 waffles at 1 carb per serving
4 oz cream cheese
2 tbs almond flour
1/4 tsp baking powder
- Pre heat waffle iron
- Add all ingredients to a high speed blender and blend until there are no lumps. If you do not have a high speed blender you may need to soften your cream cheese to ensure a smooth batter
- Pour batter into waffle maker and cook until golden brown. This takes roughly 5-6 minutes in my waffle maker.
For a savory waffle try adding garlic powder, onion powder and chives
For a sweeter waffle add a pinch of sweetener of choice, I like Pyure Stevia, cinnamon and a splash of vanilla extract.

2 tbs mayonnaise
3 tbs almond flour
1/4 tsp baking soda
